Life Changing Sweet Potato Pizza Crust

This delicious recipe is from Simply Quinoa.

Ingredients:

  • 3 cups shredded sweet potato

  • 1/2 cup quinoa flour

  • 1/4 cup nutritional yeast

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt

  • Egg replacer (equiv. of 2 large eggs beaten)*

Directions:

  1. Preheat the oven to 400ºF and line a baking sheet with parchment.

  2. Add the sweet potato to a bowl, along with the flour, nutritional yeast and seasonings and stir until the sweet potato and flours are evenly combined.

  3. Add the egg replacer to the bowl and stir to form a sticky dough. Transfer the dough to the baking sheet and spread the mixture out using your hands to form a thing pizza shape (about 1/8" thick).

  4. Bake on the center rack for 25 minutes, then flip and bake for another 15 minutes. Remove from the oven and top with your desired toppings, then bake for another 5 - 10 minutes until the toppings are cooked. Allow the crust to cool for 10 minutes before slicing and serving.

Notes:

  • While the original recipe on Simply Quinoa calls for eggs, we have replaced them with vegan egg substitutes to keep the recipe 100% whole food plant based.

    If using flax eggs, they make the dough sticky so make sure to also spray your parchment generously with cooking spray.

  • Also, when using flax, bake for the entire 30 minutes on side, then flip and cook for another 15 before adding your toppings.
